Arroz con Pollo (Cuban)
serves 4-6


  1 boiled and cubed chicken
1/4 t. pepper
1 onion, finely chopped
1 t. crushed garlic
1 t. paprika
1/2 c. green sliced olives
1 small jar of pimentos
1 c. uncooked rice
Pinch of Saffron
1/4 cup olive oil
2 c. chicken stock
1 t. salt
1 t, capers
1 can very small green peas
1/4 t. cumin seed
How to Prepare
  Heat oil, add pepper, onion, garlic, rice, paprika, and saffron.  Cook until brown,  Add stock, salt, and cumin and cook until rice is done (about 15 min.)  Add chicken, capers, and olives, and reheat mixture.

To serve, place in large casserole dish and make a well in the center.  Fill well with heated and drained green peas.  Arrange pimentos forming a ring separating the green peas and the rice.
